One Pot Meal #2: Lazy Sour Cream Chicken Enchiladas

Hi Everyone! I am back with another quick and easy meal that only requires ONE PAN. Everything cooks in one skillet which makes clean up super fast and stress free. This meal was super tasty – just like sour cream chicken enchiladas. It has all the taste of my favorite enchiladas but with less work and less time! Win win!

One Pot Lazy Sour Cream Chicken Enchiladas

What You Need:

One pound of uncooked chicken – diced into small pieces
6 oz can of Green Chiles
14.5 oz can of black beans
1 8oz container or Sour Cream
About 1/4 cup Chicken Broth
1 cup of Shredded Cheese (Whatever you prefer)
8 Medium Sized Tortillas For Serving
Following seasonings:
Onion Powder
Garlic Minced

What To Do:

Cook chicken in a large skillet with olive oil and seasonings. Once done add in your green chilis, black beans, chicken broth and sour cream and stir to combine. Then add your cheese and stir until melted. Serve in your tortillas.
