Hi Everyone! I am back with another quick and easy meal that only requires ONE PAN. Everything cooks in one skillet which makes clean up super fast and stress free. This meal was super tasty – just like super cream chicken enchiladas. It is a little soupy though so it is best to serve in bowls, we did eat it with a fork but could have probably used spoons. Hope you enjoy!

What You Need:

3 Tbsp of Butter
3 Tbsp Flour
One 14.5 oz can of Low Sodium Chicken Broth
4 oz can of Green Chiles
Half of a 14.5 oz can of black beans
One pound of uncooked chicken – diced into small pieces
6 small Flour Tortillas torn into pieces
1 8oz container or Sour Cream
1 cup of Shredded Mexican Blend Cheese
Following seasonings:
Chili Powder
Onion Powder
Garlic Minced

What To Do:

Melt the butter in a large skillet over medium heat.

Stir in flour

Whisk in the chicken broth. (This is a slow process, you don’t want to put it in all at once, take your time to build up a nice smooth mixture. It is okay to be a little watery at the end). I also turned the heat down slightly while doing this.

Add about 3 pinches of each of the seasonings. This can be to taste. Stir.

Add the green chiles and black beans and chicken.

Cook covered until the chicken is cooked fully through. About 11 minutes. I had the heat turned to medium.

Add the sour cream and stir.

Add the tortilla pieces and stir until covered.

Add in the cheese and stir until melted.
