One Pot Meal #3: Chili Mac and Cheese

Happy Monday, everyone! I am here with another quick and easy meal that is all made in one pot! It combines two of my favorite things- chili and mac and cheese! How can you go wrong??

What You Need:

-One Tbsp of Olive Oil
-One pound of ground beef
-One Tbsp Minced Onion
-One Tbsp Minced Garlic
-Three cups of chicken broth (about 1.5 cans)
-One can of tomatoes
-One can of light red kidney beans
-Two Tbsp chili powder
-One Tbsp Paprika
-Salt and Pepper to Taste
-Pasta Elbows (I use Whole Wheat)
-One cup of cheddar
-8 ounces of sour cream

1. Add olive oil, garlic, onion and beef to a large skillet and cook until beef browned.

2. Add chicken broth, tomatoes, beans, chili powder, paprika, salt and pepper and bring to boil. Stir until heated through.

3. Add the pasta and cover and simmer for about 11-12 minutes until pasta cooked.

4. Add sour cream and cheese and stir until combined and heated through.

5. Serve and enjoy!
