One Pot Meal #9: Dump and Bake Chicken Bacon Ranch

Happy Monday!

As promised, I am posting another One Pot Meal and am on my way to 100! Today’s recipe cooks in a 9×11 pan in the oven and requires no prep work, you just can dump it all in the pan and bake – as simple as it gets!

Miguel loves tator tot casserole and there are seriously so many ways you can make a tator tot casserole. This one combines some of our other favorites, bacon and ranch, and creates a perfect comfort food meal that is sure to fill you up.

Dump and Bake Chicken Bacon Ranch Tator Tot Casserole

What you need:

-About one pound of uncooked chicken breast, cubed.
-8oz of cream cheese (i use low fat)
-8oz of sour cream
-1 can of cream of chicken soup
-1 dry ranch dressing packet
-1 packet of bacon pieces
-1 and 1/2 cups of shredded cheddar cheese
-1 Package of frozen tator tots

What to do:

-Preheat oven to 400
-In a large bowl mix together all ingredients except the tator tots and 1/2 cup of cheese
-Place tator tots in alayer on bottom of 9×11 backing dish
-Pour mixture on top of tutor tots and spread to cover and combine
-Top with remaining cheddar cheese
-Bake for about 50 minutes. I stirred at around 35 minutes. Just make sure your chicken pieces are completely cooked through!

What’s left is creamy cheesy goodness that your whole family will love!


I think I will be doing new one pot meals weekly or every other week until I get to 100.
