I am 1/10 of the way to 100 meals! Today’s recipe is super easy. As in it is barely a recipe, just throwing things together. And the best part – it is healthy and tasty!!
When I was growing up, one of my favorite things was when my Mom would bake chicken in the oven marinated in a bottle of Italian dressing. Nothing fancy, but so so good. Now that I live all on my own, I still love that juicy chicken that method produces. So in an attempt to be healthy, I thought this simple way to cook chicken would be the great base of a low calorie dinner!
Italian Chicken and Spinach Wraps
What You’ll Need:
-About a pound of chicken – I get chicken tenders
-One bottle of Italian dressing of your choice
-Fresh spinach leaves
-Cherry tomatoes
-Shredded parmesan cheese
-Tortillas or wraps (I use a whole wheat tortilla)
What To Do:
-Preheat oven to 350 degrees
-Line a baking dish with aluminum foil for easy clean up
-Place chicken breast in baking dish and pour bottle of Italian dressing over it
-Cook for about 35 minutes or until chicken cooked
-Prepare your wraps by placing spinach, chicken, tomatoes and cheese on your tortilla and wrapping up!
And clean up is easy! I usually make two for myself and am good for a lunch. This is something I make a lot when Miguel is out of town because it is a lighter meal. When I do this, I make a whole pound of chicken and divide it up into containers and have a lunch for the whole week!
This idea could be adapted to a lot of different meats and flavors too, what are your ideas?
