One Pot Meal #11: Beef Stroganoff

Happy Monday! I hope you all had a great weekend. I just got back from a weekend in Chicago visiting family and my sister. It was fun to be able to see her apartment downtown!

Today I am back with another one pot meal. If you are new around here, I am on my way to 100 unique one pot meals. You can see the entire list here. Miguel loves stroganoff and I used to make a recipe that wasn’t one pot, so I decided i should try to make a one pot version of it and it turns out just as good and it is so much easier to make!

Easy One Pot Beef Stroganoff

What You Need:

-One pound of ground beef
-Minced Onion and Garlic
-Some Paprika
-One 13oz can of mushrooms
-About one pound of pasta (We used whole wheat spirals)
-One can of beef broth
-8oz of sour cream (we use light)
-One can of cream of mushroom soup

What You Need To Do:

-Brown beef in a skillet
-Add a generous amount of onion, garlic and paprika
-Add mushrooms, pasta and broth and cover.
-Cook on medium low until pasta tender. This usually takes me around 10-12 minutes.
-Add sour cream and cream of mushroom and stir until combined.

And serve! Super easy and fast comfort meal that everyone loves. Plus with fast clean up!
