One Pot Meal #12: Italian Sausage and Tortellini Soup

Happy Monday! Today’s post is my 12th one pot meal. You can see my running list to 100 here. This recipe is perfect comfort food on a cold day. Super filling and tasty too! Throw it all in the crockpot and you are done. Practically no prep work and easy clean up – what more could you ask for?

Sausage Spinach Tortellini Soup in The Crockpot

What you need:

-About a pound of sausage. I used the kind in a link, Johnsonville brand that is already cooked! Cut up into pieces.
-Bag of frozen cheese tortellini
-Two cups fresh spinach leaves
-Diced carrots, I had about a handful but this is up to you.
-Two cans of chicken broth
-Half of a pint of heavy cream.
-Minced Garlic and Onion to taste
-Salt and Pepper to taste
-Italian seasoning to taste

What to do:

Place all ingredients into crockpot on high in cockpot and cook until tortellini no longer frozen and carrots are soft. This didn’t take long in my crockpot, maybe 1.5-2 hours. Stir it occasionally!
