Happy Monday! It is another recipe today here on the blog. And I know, it doesn’t look super good, but trust me it tastes good! I’ll admit it is a little bit of a random assortment but I like to make it because it is a pretty low cal and healthy meal. So please don’t be deterred by the name or picture 🙂 And again, everything is made in one pot so only one pan to wash.
Meatball and Rice with Peas
What you need:
One package of frozen meatballs (about 30)
1 1/2 cups of brown rice
Olive oil
Beef broth: about 1 1/2 cans or two cups
1/2 package of frozen peas – about 3/4 of a cup
1/2 cup of parmesan
Pepper, garlic, onion and a little red pepper flakes
What to do:
Cook meatballs in olive oil until warm
Add rice and beef broth and seasonings
Cook until rice done about 12 minutes
(Add peas after about 8 minutes)
When done, sprinkle cheese on top and stir
