One Pot Meal #17: BBQ Chicken Pasta

Happy Monday! I am still working my way to 100 one pot meals and today we are on number 17! This is a favorite recipe of mine, it has all the taste of BBQ chicken but in pasta form. It’s a win win in my book.

BBQ Chicken Pasta

What you need:

A little over one pound of uncooked chicken, diced
One box of whole wheat rotini
One can of chicken broth
One can diced tomatoes
About 1/2 cup of BBQ sauce – I honestly eye ball it
1/2 cup of cheddar cheese
Minced onion, minced garlic and olive oil

What to do:

Cook chicken in a drizzle of olive oil and onion and garlic at medium heat
Add pasta, broth, tomatoes and stir
Add BBQ sauce and combine
Cook about 11 minutes (turn to med-low when boiling)
Add cheese and sir to combine

This gives Miguel and I four generous servings and is perfect to save for lunch the next day! I love this quick and easy pasta recipe with a unique flavor. I hope you try it out or give it a pin for later!
