Happy Monday! Like always, I like to start off my week sharing another super simple, easy and quick dinner for you to make for your family (or yourself! This recipe especially is great for meal planning! You could eat this for lunch all week.)
This is one of those meals you can really make your own – add in or substitute the “extras” and make it how you like. This is a great base recipe that you can mix up a lot of ways!
This is definitely a go-to meal in our house that is a pleaser and makes excellent leftovers.
Beef Burrito Bowls
What you need:
One pound of ground beef
One red of bell pepper diced
Minced onion
Can of black beans
Can of corn (or small frozen bag)
Can of red enchilada sauce
1 1/2 cups of brown rice – needs to be cooked. I cook mine in microwave or use Uncle Ben’s pack, Trader Joes also has frozen brown rice packs that you can microwave that work great!
One cup of pepper jack cheese shredded
What to do:
Brown beef with pepper and onion
When almost done add beans and corn and finish cooking beef
Add can of sauce and rice.
Top with cheese.
Well I am off to finish everything to host a baby shower for our niece tomorrow night, she due in just a few weeks!
