One Pot Meal #20: Pierogi Crockpot Casserole

Pierogis are a Polish dumpling – I guess similar to a ravioli in idea but not necessarily in taste. I come from a Polish heritage so Easter at my Dad’s is centered around Polish food. This includes Polish sausage, potato pancakes and of course, pierogis. There are many different kinds of pierogis from meat filled, to cheese to potato to even fruit. At easter we eat them plain usually and they are good that way as a side but this recipe makes them the meal covered in a sauce. Now, I only had access to frozen pierogis here and that makes it convenient for this recipe but I will note, pierogis from a Polish bakery are much better 🙂

Pierogi Crockpot Casserole

What You need:

-One Box of Mrs. T’s mini cheese pierogis (found in the frozen section)
-About 1 cup of chicken broth
-8oz of fat free cream cheese
-One cup of shredded cheddar cheese
-One pound of sausage dice (We used Johnsonville smoked sausage but you could use kielbasa)
-Salt and pepper to taste

What to DO:

Add everything to crockpot (don’t forget a liner) and cook on high for about 2 hours (it cos quick so may be done before that!) Stir occasionally. You can also turn to low/warm if you notice pierogis are getting to soft.

We served with a veggie but it would be great with a salad as well! With the side, we got four servings out of it.
