One Pot Meal #21: Sweet Potato and Chicken Skillet

Happy Monday! It’s another meal on my blog as I work my way to 100. Today’s recipe is what I would consider on the “healthier” side and lower calorie than some of my recipes (I really like pasta if you can’t tell) but we can’t eat pasta every night (although I would like to… lol) so I try to make some healthier meals when I can. It’s even better when I can make it into a one pot meal as well!

This recipe combines chicken, sweet potatoes, tomatoes, which make an interesting combination of food that you may not think of but it definitely tastes great together!

Chicken and Sweet Potato Skillet

What you Need

-About a pound of chicken (I usually have a little over), cubed into smaller pieces
-One pound of Sweet potatoes cubed (My grocery store had a frozen bag of cut sweet potatoes that I used)
-One pint of cherry tomatoes
-4 ounce can of green chiles
-15 oz Can of Black Beans drained
-1/2 Cup of red enchilada sauce
-Seasonings: Minced onion, Minced garlic, chili powder, salt and pepper to taste

What to do

-Cook chicken and potatoes in a big drizzle of olive oil and mentioned seasonings in a skillet over medium heat. This will take about 15 minutes to cook through
-Add remaining ingredients, chiles, tomatoes, beans and sauce and heat until warm,
