One Pot Meal #22: Taco Soup

It’s One Pot Meal Day! Today’s recipe is super easy (I know, I always say that but seriously all my recipes are super easy!!) and delicious and even better – low carb and high protein.

I love soups, especially soups that are loaded and creamy and this soup doesn’t disappoint. Everything cooks really quick in one pan so you will have dinner on the table in no time and clean up will be a breeze.

One Pot Beef Taco Soup

What you need:

One Pound of ground beef
Minced Onion
Taco Seasoning Packet
150z Can of Diced Tomatoes
One Can of rotel
Once Can of Black Beans
1/2 Packet of Ranch Dressing Seasoning
8oz of Fat Free Cream Cheese
5oz Container of Greek Yogurt
About one cup of corn
1 cup of Shredded Cheddar Cheese

What to DO:

Brown beef in large pot with onion. Add taco seasoning.
Add all other ingredients and combine. Stir occasionally until heated through.
Add cheese and stir in until melted.
Garnish with more cheese and cilantro.

That’s it! It is also good served with some tortilla chips.
