Hi friends, happy Monday!
I’m trying to get into the groove of posting a new recipe every Monday so that I can make my way to 100 one pot meals as quickly as possible! It feels good to be in the 30’s but there is still a lot more recipes to come!
And today’s uses my favorite kitchen small appliance – the crockpot. One pot meals in the crockpot are the best because you really aren’t even cooking, you just dump and go and dinner is ready in a few hours and it just doesn’t get any better than that. Throw in the fact that you can make this a pretty healthy meal and it makes great leftovers or meal prep and there really isn’t any way this could turn out bad.
Crockpot Chicken Burrito Bowls
What You need
About one pound or a little more of boneless skinless chicken (I use tenders)
1 1/2 cup of brown rice uncooked
1 can of chicken broth
1 small can diced green chiles
1 can of corn
1 can of black beans
1 jar of salsa
About 1 cup of shredded cheese of your likeness – or however much you want
Seasonings: Chili powder, Minced Garlic, Minced Onion – to your taste
What to do
Put all ingredients except for cheese into your crockpot – (don’t forget your crockpot liner for easy cleanup) and combine. Cook on high about 2 1/2 hours or until chicken is done (my crockpot cooks pretty fast and I also stir a couple of times). Shred your chicken and stir in the cheese.
Serve alone or over a bed of lettuce.
I like to think of my basic Panchero’s or Chipotle order and make it at home, so feel free to switch things up a bit to make it how you like!
