One Pot Meal #32: Southwest Turkey Sausage Scramble

I just got back from a quick, last minute trip to Atlanta this weekend but I still have a meal for you! This one is a little different than my normal meals you see me post but ya know, I try to branch out and appeal to all 🙂

Today’s meal is a breakfast recipe technically, but we ate it for dinner. We eat breakfast for dinner a lot around here. And I’m not talking pancakes and waffles, I mean hearty breakfast casseroles and egg scrambles. If you don’t do this you should! There are so many breakfast recipes out there that are so good but I never have time or energy to make them in the mornings so I enjoy them for dinner instead. (Plus there’s usually leftovers so you can eat them for breakfast the next morning to!) And while some breakfast recipes can’t be made in one pot – I made one up that only uses one pot so I could share it all with you!

I’m also still on my health kick so you can really make this meal a pretty healthy one and as always, feel free to substitute whatever veggies you like.

Southwest Turkey Sausage Egg Scramble

What you need

One pound of ground turkey sausage
8 eggs
1 chopped green pepper
1 chopped jalepeno
1 can of rotel
1 can of black beans
About 1 cup of shredded cheddar (or however much you like)
Seasoning: minced garlic, minced onion, pepper, whatever other seasoning you like on eggs

What to do

Start browning your turkey and add in your chopped peppers. Whisk eggs together in a bowl and pour over sausage when pretty much cooked through. (You could also add a splash of milk to your eggs but I didn’t). Add your seasonings to the pan and start scrambling your eggs using a spatula. Add rotel and beans to pas and continue to scramble until eggs are set.  Add in cheese and stir until melted.

That’s it! A hearty dinner or breakfast all made in one pan quickly! You could serve this with wheat toast on the side too if you need it. But otherwise this made about 4 servings for us.
