One Pot Meal #35: Shrimp Alfredo

Today’s meal is probably my husband’s absolute favorite ever. Miguel loves to order Shrimp Alfredo at restaurants and it’s one of his most requested meals. Over the years I have mad a lot of Shrimp Alfredo and I have tried a lot of different recipes. Alfredo sauce is a pretty basic recipes but there are lots of ways to make it just a little different. And for this meal, I made it all in one pot! And Miguel told me he thinks this was one of the best ones I’ve made so it must be a winner!

Like I said, Alfredo can be changed up a lot so feel free to be creative with the seasoning or proportions to make it your own. But here is a basic one pot alfredo.

One Pot Shrimp Alfredo

What you need

One pound of fully cooked shrimp (I buy a frozen package and let it thaw before dinner)
One pound of pasta: linguine or fettuchini work well for this
4 Tablespoons of butter
1 Cup Heavy Cream
2 Cups of water
About 1/4 cup of milk (you can add more if you think it needs it at the end)
1 Cup Parmesan Cheese Shredded
1 Cup Mozzarella Cheese Shredded
Seasonings: Minced Garlic, Salt, Pepper (these are the basics, feel free to add in what you like)

What to do

Place the water, cream, butter, pasta, seasonings and milk into a pan and bring to boil. Reduce heat and simmer while stirring until pasta cooked (10ish minutes). Add in the cheese and stir until melted. Add in shrimp and stir and make sure the shrimp gets warm.

That’s it! Alfredo is super easy to make and shouldn’t be intimidating. Homemade is much better than from the jar! This gave us four very large portions.
