One Pot Meal #36: Crockpot Taco Chicken and Rice

Happy Monday!

It’s been a while since I’ve posted a one pot meal with everything going on but I am back on track for my Weekly Monday Meals!

For this meal we are breaking out the crockpots (my fave kitchen appliance) but I am sure it could work for an instant pot too with adjusted times! Dump, cook, eat. It’s that simple. And that’s why I love these types of recipes because anyone can do it and it doesn’t take much time to prep and you have time to do everything else on your To Do list while it’s cooking. Win Win Win.

Creamy Crockpot Chicken and Rice

What you need

1-1.5 Pounds of Chicken Breast (I use tenders and cut them up a little for faster cooking but you could use bigger pieces and shred them at the end)
1 Green Bell Pepper
1 Red Bell Pepper
1 Can Rotel
1 Packet Taco Seasoning
1 Cup of Corn
1 Can Black Beans
1 Small Can Green Chiles
1.5 Cups of Uncooked Rice
About 1 Cup of Chicken Broth
Minced Onion – To your taste

1 Small Container Plain Greek Yogurt
As Much Shredded Cheese as you want (About a cup)
Cilantro For Garnish (Optional)

What to do

Place all ingredients except last three into crockpot and combine (don’t forget your crockpot liner!) Cook on high until chicken done. (My crockpot cooks pretty fast when smaller pieces – about 2.5 hours. Yours may take longer). At the end, add in your yogurt and cheese and stir. Top with cilantro and serve!

Super easy. Super yummy. You should make it!
