I bet you were wondering when I would have another pasta recipe! Haha. Okay, may be not really. But it has been a while and pasta meals are my favorite. And this one might be very near the top of my favorites. I don’t know if it is the fajita seasoning that just makes it different than anything else I cook or what but I could not stop eating this when I made it. It is SO good. You should make it because it’s easy too.
It takes the flavors of fajitas and puts it in pasta. Nothing to not like here.
One Pot Chicken Fajita Pasta
What you need
About 1 Pound of Uncooked Chicken, diced
2 Bell Peppers: One green and one red
1 Can of Chicken Broth
1 Can Rotel Tomatoes
1 Box Whole Wheat Pasta (we used rotini)
1 Packet of Fajita Seasoning (not taco)
1/2 cup to 1 cup of Heavy Cream
Olive oil, minced onion, minced garlic
What to do
-Cook chicken in a large skillet over medium heat. I like to do this in a drizzle of oil and seasoned with the garlic and onion.
-Add in the peppers while the chicken cooks.
-Once cooked, add the fajita seasoning, broth, pasta and rotel and stir to combine.
-Cook about 5 minutes or until the broth has all pretty much been soaked up. Reduce the heat to a simmer and add in your heavy cream. I start with a 1/2 cup and stir that in and continue cooking another 5 minutes or until pasta done.
-I add a little heavy cream at a time if I think it is getting a little dry, until it’s finished cooking.
