One Pot Meal #40: Roasted Red Pepper Chicken Alfredo

I know, I know. Two chicken pastas in a row? That’s just how things worked out. I also love pasta. And chicken. So you get two in a row 🙂 Don’t worry, they’re both good. Happy Meal Monday to you!

One Pot Roasted Red Pepper Chicken Alfredo

WHat you need

About 1 Pound of Chicken – Diced
1 Can of Chicken Broth
1 Jar of Alfredo Sauce (I used Bertolli Basil Alfredo)
1 Box of Short Cut Pasta (I used whole wheat shells)
1 7oz Jar of Roasted Red Peppers (You won’t use the liquid)
About 1/2 Cup of Shredded Parmesan
4-5 Cups of Fresh Spinach (A standard bag is 6 cups)

Olive oil, Tbs minced onion, Tbs minced garlic

What to do

-Cook chicken in a large skillet over medium heat in a drizzle of olive oil and with garlic and onion
-Once cooked, add in the chicken broth, pasta and peppers (pick out the peppers with a fork, I did not use the liquid in the jar)
-Cook about 5 minutes while stirring frequently
-Slowly start adding in the spinach by handful. It will cook down a lot as you stir.
-Once the spinach is cooked down, add the alfredo and continue cooking a couple of minutes until pasta done.
-Finish with some parmesan cheese sprinkled on top.
-Total pasta cook time is about 10 minutes.
-Serve and enjoy

One pot meals, it really just doesn’t get much easier (plus they are a breeze to clean up!)
