One Pot Meal #41: Italian Meatball and Tortellini Soup

Tis the season for soups and comfort food! Oh and your crockpot (though I use it all year round). This is the perfect cozy meal and it really doesn’t get much easier than this. (I promise, just keep reading).

One Pot Italian Meatball and Tortellini Soup

What you need

1 Package Frozen Italian Style Meatballs
1 Package Frozen Tortellini
1 14.5 oz Can of Beef Broth (2 if you want it more soupy)
16oz of Tomato Sauce
1 14oz Can of Diced Tomatoes
About 2 Cups of Spinach
1/4 Cup of Milk
About 1 Tbsp Minced Onion
About 1 Tbsp Minced Garlic
Pepper to Taste

WHat to do

Using a liner, place all ingredients in the slow cooker. Cook on low for at least 2.5 hours. Dish into bowls and top with shredded Parmesan if desired.

It doesn’t get much easier than dump and bake meals. They are easiest recipes ever because they don’t require any prep at all! This is the perfect Sunday night meal, put in your slow cooker in the afternoon and relax! And if you remember to use a crockpot liner, clean up will be a breeze as well!
