So I’m gonna be honest, I had a total fail while making this meal a couple of week ago. I was rushing to try and get it done before I lost all sunlight for a picture and totally forgot to add broccoli to this dish. And then it was still dark when I tried to take pictures. So for this post, please excuse the lack of broccoli in the photos (because I did end up adding it in there for us to eat) and also the lack of sunlight for nice, bright pictures. I promise this recipe is good either way 🙂
It is a super creamy and cheesy goodness that will please even the pickiest of eaters. Oh and it takes minutes to make (and clean up).
Cheesy Chicken and Rice (and Broccoli)
What you need
1.5 Pounds of Chicken Breast – diced
1 Can of Cream of Chicken Soup
8 oz of Sour Cream
1/4 Cup of Milk
1.5-2 Cups of Brown Rice (Use a microwaveable packet!)
About 1 Cup of Shredded Cheddar Cheese
About 1 Cup of Broccoli Florets (Use a microwaveable steamer package)
Olive Oil, 1 Tbsp Minced Onion, 1 Tbsp Minced Garlic, 1 Tbsp Parsley
What to do
Cook chicken in drizzle of olive oil, onion, garlic and parsley in a large skillet. Cook rice in microwave while chicken cooks. Once chicken is done, add cream of chicken soup, sour cream, milk and rice and combine and heat until warm. (cook broccoli in microwave while doing this). Add your broccoli and stir through again. Finally, add your shredded cheese and stir until melted.
That’s it – everything you need for a meal in one pan! Serve and enjoy!
