One Pot Meal #43: Creamy Pumpkin & Sausage Pasta

The perfect recipe for your Thanksgiving week because the star of this recipe is pumpkin! Now, I was a little nervous to make this because I wasn’t sure how I’d like it. Well, I ended up loving it! Pumpkin is a squash and it can be savory. (It doesn’t have to be mixed with cinnamon and spice to be good!!) This recipe is so easy too, but definitely something different to change up your regular dinners. Don’t be afraid of cooking with pumpkin… I’m so glad I gave this a shot and I’m sure you will too.

Plus I think this could make a great unconventional Thanksgiving side 🙂

One Pot Creamy Pumpkin and Sausage Pasta

What you need

1lb Ground Sausage (Pork or Turkey both work)
1 Box Whole Wheat Rigatoni
1 14.5 oz Can of Chicken Broth
1 14.5 oz Can of Pumpkin
About 3/4 cup of Heavy Whipping Cream
About 1/2 cup of Shredded Parmesan Cheese
About 2 Tbsp Minced Onion
Minced Garlic, Ground Pepper and Sage for seasoning

what to do

Cook sausage with onion in large skillet over medium heat. Add chicken broth, rigatoni and seasonings when meat done. Cook until all broth is absorbed, stirring frequently. Add cream and pumpkin and combine. Continue cooking on medium-low until pasta is tender. Top with cheese and serve!
