Well friends, I’m going to be honest. I don’t really like Pot Roast. But I made one. And now i’m posting the recipe. But I didn’t really like it. That doesn’t mean it isn’t good, I just don’t really like red meat. However, my husband requested pot roast for dinner and when I looked up how to make pot roast and realized it was a One Pot Meal, I couldn’t *not* put it on to my list of 100. And for the record, my husband said it was good so as long as you like pot roast, I’m sure you’ll like it too (and love how easy it is to make and clean up).
Crockpot Pot Roast
What you need
2.5 Pounds of Boneless Chuck Beef Roast (from the meat counter)
About 1.25 Pounds of diced Potatoes (My grocery store sells “Simply Potatoes” which are diced, uncooked potatoes in a bag, this is what I used so I didn’t have to dice my own!)
1 Bag of Baby Carrots (One pound)
1 Can of Beef Broth (14 ounces)
Seasonings:
Salt and Pepper
Rosemary
Thyme
Minced Garlic
Minced Onion
what to do
Using a liner, place your potatoes and carrots in crockpot and season with the above seasonings to your liking. Cut your roast in half and rub with a generous amount of the above seasonings (just make sure its covered). Place roast in the crockpot and pour broth over top. Cook on low about 6-8 hours. (After about 6 hours, I started cutting the roast into smaller pieces so I could see how the inside was cooking and for easier serving). Serve when meat is finished to your liking (it can still be a little red in the middle).
That’s really how simple pot roast is, so don’t be scared away. You should definitely try it!
