Soup season is in full swing around here. I probably make a hearty soup at least once a week this time of year. It makes the perfect Sunday meal to throw in the crockpot (with a liner) and let it cook all day – so simple which is usually what I need on a Sunday!
This soup recipe doesn’t get much simpler – it’s a true dump, bake and come back when it’s done plus clean up is so easy too!
Creamy Ham and Potato Soup
What you need
One Pound of Cubed Cooked Ham (they sell it at the grocery store)
About 1 1/4 pound of diced potatoes (My grocery store sells pre diced Simply Potatoes)
1 14.5 oz an of Chicken Broth
1 Cup of Corn
8oz of Sour Cream (I used light)
1/4 Cup Milk
About 1 Cup Shredded Cheddar
Seasonings: Minced Onion, Minced Garlic, Parsley, Salt and Pepper
What to do
Place your potatoes and ham into the crockpot and generously season with above seasonings. Add sour cream, corn and broth and combine all. Add more seasonings to your liking. Add milk and cheese and stir that up as well. Cook on high about 3 hours or so depending on your crockpot. Just make sure the potatoes are cooked!
