I’m just gonna go ahead and say it, this soup recipe turned out so good! I even got an approval out of Miguel and he claims to hate soup haha. Anyway, this soup could be made on the stovetop or your crockpot, I used the stove this time for sake of time, but you could easily modify by throwing everything into your crockpot. This soup is full of flavor and texture and you’re sure to enjoy it too!
One Pot Chicken and Tortellini Soup
What You Need
About 1 lb (or a little more) or diced uncooked chicken
1 diced red pepper
Small block of frozen spinach – try to thaw it ahead of time
About 1 Cup Frozen Diced Carrots
1 Package Frozen Tortellini
3 Cups Chicken Broth
1/2 Cup Heavy Cream
Olive oil
Minced onion, minced garlic, pepper, parsley and crushed red chili pepper
What to do
Over medium heat, cook your chicken in a big pot with a drizzle of olive oil and a generous seasoning of garlic, onion and pepper. Dice and add in your pepper as the chicken is cooking. Once the chicken is done, add in spinach and continue cooking and stirring until spinach is completely mixed in. Add chicken broth, carrots, tortellini and heavy cream to the pot and combine. Also add in your parsley and crushed red pepper at this step. Bring it up to a boil and then reduce to a simmer and let cook for a few minutes until done. It was probably about 10ish minutes that I let it cook! Just make sure nothing is frozen and you’re good to go.
Serve in big soup bowls topped with a little shredded parmesan if you’d like and your done!
This works super well as left overs too, I ate this recipe for a few days because it makes a lot and reheats well!
