One Pot Meal #47: Chicken Teriyaki with Broccoli

Happy Monday! When I was planning what recipes to make/post next, I was shocked that I had not posted this one yet! This one is a hit in our house- it’s super easy to make AND it is pretty healthy and low calorie too! It’s also hubby approved. It makes great leftovers and works for meal planning too – make enough for lunch for the week or serve for a family dinner!

One Pot Chicken and Broccoli Teriyaki

What you need

About 1-1.5 Pounds of uncooked chicken, diced
Olive oil
Minced garlic and Onion – about a tablespoon of each
Teriyaki Sauce
Soy Sauce
Frozen Broccoli – however much you like, I use about half of a frozen bag
1 Package of microwaveable brown rice. I use Trader Joe’s frozen rice or Uncle Ben’s pouches
1 Pint Cherry Tomatoes

what to do

Cook chicken in drizzle of olive oil with garlic and onion in a large skillet. Add teriyaki, soy and broccoli once chicken is done or about done. Cook until broccoli heated through, stirring frequently. Add the tomatoes about half way through. While the broccoli is cooking, heat your rice pouch in the microwave and add to your skillet.

That’s it! Give it a nice stir and serve.

This recipe is super easy to add more or less to depending on how much you need, either way it is super easy and you will love it!
