Okay guys, I promise that the photos for my one pot meals will get better as soon as I start getting more daylight. These one pot meals that I make and share with you all are truly just the meals I cook nightly for our dinners. I usually cook dinner around 6:00 each night and unfortunately the sun sets before 5PM here in Iowa during the winter so I don’t have the best lighting to snap these photos. Regardless, they all taste just as good even with a subpar photo!
This recipe in particular is pure comfort food and perfect for a winter night, and as always, is easy peasy to make. Anyone can do it!
Crockpot Chicken and Noodles with Veggies
What you need
-A little over a pound of uncooked chicken, diced
-1 Can Cream of Chicken Soup
-1 Bag frozen Veggies Mix: I used a green bean, pea and corn mix
-2 Cups of Chicken Broth
-Seasonings: Minced Onion, Minced Garlic, Pepper, Parsley
-1 Box Whole Wheat Shells
-About 1/2 Cup Milk
-1 Cup of Shredded Cheddar Cheese
What to do
Using a crockpot liner, place chicken, soup, broth, veggies and seasonings to crockpot and cook on high about 2 hours or until chicken done. Add the pasta and milk to the crockpot and cook for another 30 minutes, stirring 15 minutes in. If it doesn’t look like there is enough liquid to cook the pasta in, add more milk. When pasta done, add the cheese and stir to melt.
And you are done! Serve it up to your family and save the leftovers (if there are any) for the next day!
This meal is one of my favorite types because it all just goes into the crockpot and it does all the work for you. I just place it all in and walk away until it’s done. And don’t be afraid of putting pasta in your crockpot either – I promise it turns out just as good as stovetop!
