Recipe number 50 is a total classic – and so easy. Everyone should have a chili recipe and this is mine. Chili is great because not only can it be a one pot meal but you can also customize it however you want. Here is what I do, which I promise is so good and so easy to follow, but feel free to add your own twist.
One Pot Chili
What you need
One pound lean ground beef
Two tablespoons minced onion
One tablespoon minced garlic
Two tablespoons chili powdered
One can Rotel
One can black beans rinsed
One can Bush’s kidney beans in chili sauce – not drained (we like to use “spicier” sauce”)
8oz Can tomato Sauce
4oz Tomato Paste
15oz Beef Broth (About 1 can)
Ground pepper to taste
Shredded cheddar, sour cream and crackers for topping
What to do
Ground beef in a large pot over medium heat, add in onion and garlic. Add all of your canned goods and stir to combine. Turn heat down to low and cover. Simmer for at least 30 minutes to a couple of hours. Right before you want to eat, turn up the heat a little to make sure it is warm enough to eat. I always enjoy my chili with come cheese and sour cream on top!
Enjoy! This is one of Miguel’s favorite meals – he tells me every time! Make it for your family next while it’s still “chilly” outside.
*We also have this ground ghost pepper we like to add to our chili – just a little bit but it adds a kick. Feel free to add something with a little spice to your chili if that’s what you like 🙂
