I’m officially closer to 100 than 0 One Pot Meal recipes that I’ve posted! I’m hoping to do the second half much quicker than the first 50. If you didn’t know, these are just the meals I make for dinner at my house on a nightly basis. These are not just made for the blog- I make dinner every night and if I think it’s a good meal to share, I take pictures and document it for you all! So let’s get on to the next meal using my favorite kitchen appliance, the crockpot!
One Pot Creamy Crockpot Chicken and Corn Casserole
What you need
About 1 pound of chicken – I usually use a little more and I cut it up into smaller pieces for faster cooking
1 can cream of chicken soup
1 can Rotel tomatoes
1 cup corn (canned or frozen)
1 cup of shredded cheddar cheese
1 microwaveable rice packet (I use Trader Joe’s frozen rice but Uncle Ben’s is good too!)
Parsley and Minced Onion for seasoning
What to do
Place all ingredients into your crockpot (don’t forget to use a liner). And cook on high until chicken done (mine usually takes around 3 hours). At the end (or any point in time really) cook your rice in the microwave and dump the whole packet into the crockpot with your other ingredients and stir to combine. Serve up when you’re ready!
I say you can add in your rice at any time because it won’t hurt it to be in the crockpot cooking along with everything else a little longer. Also, you can cook on high until it’s the chicken is done and then turn to to low or warm until you are ready to serve if it is done too early.
