Well we all sprung forward this weekend (which means we’re all tired) BUT that also means the sun is out later in the day and that means my One Pot Meal pictures are about to increase A LOT in quality! Haha. So bare with this last poor-quality photo recipe (I promise I am going to go back and reshoot all of these less than great food photos) but until then, just trust me when I say these meals are good 😉
Today’s post is a “bake” which means put it all in a pan and throw it in the oven, do whatever you need to do, and then pull it out and serve when it’s done. Everything you need for a full balanced meal is all mixed in so no extra fuss work. Enjoy!
Southwest Cheesy Chicken and Rice Bake
What you need
About 1 pound of uncooked chicken, diced into pieces
1 Package of Microwaveable Rice – about 2 cups (I use one bag of Trader Joe’s frozen brown rice)
8oz Sour Cream (I use light)
1 Cup Cheddar Cheese Shredded
1 Cup corn (frozen or canned)
1 Cup black beans (rinsed)
1 Can Rotel *(I did not use this when I made it but I think it is what this recipe was lacking in terms of flavor and texture and will be adding it next time)
what to do
Preheat oven to 400 degrees and microwave your rice packet and dice your chicken. Place all of your ingredients into a 9×11 pan lined with aluminum foil and combine. Bake until chicken done (around 35 minutes) and serve.
These recipes are my absolute fave! (Plus this one isn’t too bad on the health rating either).
