My schedule is a little off this week so we the new meal post is on Wednesday today! I’m trying to eat healthier so this meal I tried to make on the healthier side. No dairy. It’s not in my norm haha. So enjoy!
One Pot Cilantro Lime Chicken and Rice Skillet
What you need
About One Pound of Chicken – diced
Minced Onion and Garlic
8oz Can Green Chiles
1 Can Black Beans
1 Pack of Microwaveable Brown Rice (I used frozen)
Juice of Half a Lime
Cilantro to taste
What to do
Cook chicken in a drizzle of olive oil in a large skillet. Cook your rice in the microwave while chicken is cooking. Add onion, garlic, chiles, beans and rice to the chicken and combine. Add your lime juice and cilantro to taste and combine.
Serve and enjoy! Super simple and yummy!
