So I know it’s not technically soup season anymore, but my husband got Invisalign last week and had sore teeth so he requested easy to eat foods. And let me say, this recipe turned out better than I expected! I honestly was worried it would be bland but it wasn’t at all! (I think the key was the rotes so don’t skip that!) It was so good. Even in May. (But hey, it’s kind of Fall like weather right now so I think that’s okay!) Save this for a great and easy go to soup meal that can be made in one pot! (And in under 20 minutes)
One Pot Hamburger and Vegetable Soup
What you need
One pound ground beef
Minced onion and garlic and ground pepper for seasoning
About 8oz frozen diced carrots
1 can corn drained
1 can rotel
8oz can tomato sauce
1 can beef broth
Oyster crackers for serving
What to do
Brown beef in a large pot and add seasonings. Add carrots and cook on medium a little bit to soften them up. Add your canned goods and stir to combine. Continue to heat on medium until it is warmed through. Then turn down heat to medium low and let it simmer for at least 5 minutes. Ladle into bowls and top with oyster crackers.
That’s it! Told you it was easy and quick. This soup will for sure become a staple in out house.
