One Pot Meal #62: Cauliflower Rice Chicken Casserole

Hello and Happy Monday! We are on the vacation countdown which means me not only trying to get everything in order but also cook fairly healthy before we indulge for a week on vacation food. Which brings us to today’s recipe. This is a super low cal dinner that can whip up in minutes (with one pan and the help of your microwave). It uses riced cauliflower as a substitute to regular rice, which I think if you camouflage it well, you almost can’t tell the difference.

One Pot Cauliflower Rice Chicken Casserole

WHat you need

About one pound of uncooked chicken, diced
(Olive oil, minced onion and minced garlic to cook with)
One frozen package of riced cauliflower
One frozen package of broccoli (I used a microwave steamer pack)

1/4 Cup Chicken Broth
8oz Light Sour Cream
One Cup Shredded Cheddar Cheese

Salt and pepper to taste OR Trader Joe’s Everything Seasoning- using this made it so tasty and I highly recommend!

What to do

In a large skillet, cook your chicken with olive oil, onion and garlic. Cook cauliflower rice and broccoli in the microwave according to directions while you do this. Once all three are done cooking, add broth, cauliflower and broccoli to skillet and combine. Add sour cream and cheese until combined and melted. Season with seasoning (I used about two tablespoons of everything but the bagel). That’s it! Enjoy my friends!
