One Pot Meal #63: Creamy Chicken Marsala Pasta

One of my absolute favorite meals ever is Rigatoni D from Maggiano’s. It is so wonderful. I could eat it every day. Today’s recipe tried to catch the essence of that beloved pasta dish (though it is not quite as good as the real thing). It has the same flavors and feel though to satisfy my craving. I made the rookie mistake of not buying rigatoni and accidentally putting rotini in my cart but next time I will be sure to add the right pasta. Maybe then it will feel even closer to the real thing??

I asked Miguel if he thought it was close to Rigatoni D and he said it needed more butter. LOL. I didn’t use any butter in my recipe but maybe that’s what it’s missing?? Either way you should for sure try this quick and easy recipe out.

One Pot Creamy Chicken Marsala Pasta

What you Need

About one pound of chicken diced
Minced Onion, Garlic, Black Pepper, Olive Oil for cooking
1 can chicken broth
1/2 cup marsala cooking wine
1 Box short cut pasta
16oz canned mushrooms drained
1 Cup heavy cream
1 Cup shredded parmesan cheese

Parsley to garnish

What to do

Cook chicken in olive oil and seasonings in a large skillet. Add chicken broth and marsala wine and then your pasta and mushrooms and combine. Bring to a light boil and then turn down to a simmer and cook until pasta almost done (stirring frequently) – add heavy cream and a splash more of marsala and continue cooking and stirring until it thickens. Add cheese and stir until melted. Top with parsley.

That’s it! So quick and easy and a crowd pleaser for sure. This is one of my favorite types of meals and it makes great left overs too.
