At our house we love chicken/bacon/ranch and we love the crockpot. It makes sense to put them together! I wanted to amok something that was low-carb so this recipe uses cauliflower rice instead of regular rice so it’s actually a pretty low-cal meal! All of the great flavors but guilt free. You should give it a try!
One Pot Chicken Bacon Ranch Casserole with Broccoli
What you need
About 1 lb chicken
1 Bag frozen broccoli
1 Bag frozen cauliflower rice (microwaveable)
1 small bag of bacon bits
1 8 oz block fat free cream cheese
About 1 cup ranch dressing
About 1 cup shredded cheddar cheese
Minced onion/garlic and black pepper for seasoning
What to do
Place chicken, broccoli, ranch, cream cheese, bacon and seasoning in crockpot. Cook on high about 2.5-3 hours. When almost done, cook cauliflower rice in microwave and add to crockpot. Then add your cheese and stir until melted. That’s all you have to do for this simple recipe!! Don’t forget to use a crockpot liner for even quicker clean up.
