One Pot Meal #66: Tortellini with Beef and Spinach

My Meal Monday had to get pushed back because of Prime Day so I’m bringing you this week’s meal on a Wednesday! Quick and easy meals are my game right now more than ever because things have been crazy with traveling, work, home projects and just trying to enjoy summer time. Today’s meal is perfect because it whips up so fast and in one pot – plus it’s hearty and will fill you and your family up.

One Pot Tortellini with Beef and Spinach

What you need

1 Pound Ground Beef
1 Package Frozen Tortellini
1 Can Diced Tomatoes
Frozen Spinach
1/2 Cup Chicken Broth
1/4 Cup Heavy Cream
1/2 Cup Shredded White Cheese (I used a blend of Mozzarella and Parmesan)
Parsley and Crushed Red Pepper flakes (optional)

Minced Onion, minced garlic and salt and pepper for seasoning

What to do

Brown ground beef in a large skillet with onion and garlic. Once brown, add tomatoes, tortellini, spinach and broth. I also add more seasonings, onion, garlic, crushed red pepper, black pepper. Cook while stirring frequently for about 5 minutes. Add heavy cream and continue cooking until tortellini done and sauce has thickened. Add cheese and stir until melted. Let sit to thicken up if needed.

That’s it! This will be a crowd pleaser for sure.
