One Pot Meal #67: Creamy Chicken Rotini

Hi! I’m back! I took an impromptu blog break last week because I just needed a break to regroup and get things caught up. The other day I made this super easy pasta meal that is super simple but is so good. Not quite a Mac and cheese but also not an Alfredo- it still has all of the key ingredients of a great comfort food meal. This will be a family pleaser for sure!

One Pot Creamy Chicken Rotini Pasta

What you need

One Pound Uncooked Chicken Diced
One Box Whole Wheat Rotini Pasta
One Can Chicken Broth
One Can Cream of Chicken Soup
8oz Sour Cream
One Cup Shredded Cheddar

What to do

Cook chicken in a large skillet with olive oil and any seasonings you want (I used minced onion, garlic, black pepper). Then add chicken broth, past, cream of chicken and combine and cook until pasta is al dente. Then add sour cream and cheese and stir until melted and mixed. That’s it! Really! So so super easy to do and such a good, crowd pleasing meal.
