Sometimes you just need breakfast for dinner! I love making breakfast scrabbles for dinner because they can be so healthy and low calorie but also super filling! I usually add some toast and we are good to go. You can definitely eat egg scrambles as leftovers the next day too!
One Pot Chicken Sausage Scramble
What you need
16oz Precooked Chicken Sausage, diced (I used Johnsonville)
6 Eggs
Milk
1 Bag Spinach
1 Pint Cherry Tomatoes
1/2 Cup Parmesan Cheese

What to do
In a bowl whisk together eggs and milk with seasonings, set aside. Place chicken sausage into large skillet with olive oil and heat until pan warm. Slowly add the egg mixture and start to scramble. Also add in the spinach so it can cook as well. Once almost done add in the tomatoes then cheese and scramble until combined. We then serve ours with some toast on the side! Super simple meal for breakfast or dinner!
