One Pot Meal #69: Pepper Jack Mac and Cheese

Mac and cheese is one of my favorite foods ever. And there are so many ways to change it up and make it different. This is definitely not your standard macaroni and cheese recipe. I love pepper jack cheese so I decided to use it for a little kick and then I also made it one pot for the quickest cook time and clean up. You can’t go wrong!

One Pot Pepper Jack Mac and Cheese

What you need

One pound chicken diced
One 15 ounce can chicken broth
One 8 ounce can green chiles
1/2 cup green enchilada sauce (I buy a 15oz can)
One box whole wheat elbow pasta
8 ounces of sour cream (I used low fat)
1 cup shredded pepper jack cheese

Olive oil, minced garlic, minced onion, black pepper

What to do

Cook your chicken in a large skillet with olive oil and seasonings. Add your chicken broth, green chiles, enchilada sauce and pasta to skillet. Combine and cook until pasta is done. Elbows cook pretty fast! Like 6-7 minutes. Once the pasta is finished, turn off the heat and add your sour cream and cheese and stir until melted and combined.
