One Pot Meal #72: Pizza Chicken Bake

Happy Monday Blog Friends. Long time no meal recipe- I know. Maybe someday I can get on a better normal schedule, but I’m not really sure what normal is around here anymore but oh well. Today’s meal I threw together on a whim last week and it didn’t turn out too bad. I’ve been experimenting with no/low carb dinner options (I can’t give up carbs completely but just trying to cut back where I can) and this one fit the bill but was still filling (probably thanks to all the cheese lol). But in reality, anything that I can throw in a baking dish and leave for 40 minutes while I do other things is a win in my book. Give this a try!

One Pan Pizza Chicken Bake

What you need

About 1 pound (or more) of chicken, diced
1 Block Fat Free Cream cheese, diced (or regular)
1 Large can marinara sauce
1 Cup Mozzarella Cheese Shredded
1 Package frozen riced cauliflower, the kind you put in the microwave (You could also just used regular rice)

What to do

Preheat oven to 400 degrees. Meanwhile, cook your cauliflower for only half the allotted time (to thaw it out). Place chicken and cream cheese in a greased or foil-lined 9×11 baking pan. Add cauliflower when done. Cover it all with marinara sauce and combine. Top with cheese. Bake for about 35 minutes. Remove and serve!
