One Pot Meal #75: Mexican Street Corn Soup

Hello! Happy Monday! Do you want a super simple (and delicious) meal to start your week? Well too bad if you don’t, because you are getting one any way! 😉 I will never stop talking about my Crockpot and how easy it makes dinner (especially on Sundays for me). I really liked how this recipe turned out – it had great flavor and texture and perfect for your chilly Fall night! Put this on your dinner list now!

One Pot Mexican Street Corn Soup

What you need

1 Pound Chicken, uncooked and dice
1 Can of Creamed Corn
1 Can of Mexican Corn
1 Cup Chicken Broth
1/2 Cup Heavy Cream
1 Can Black Beans (rinsed and drained)
1 Small of Green Chiles

Seasoning: Chili Powder, Paprika, Minced Onion, Minced Garlic
Pepper Jack Cheese to top

What to do

Place all ingredients (except cheese) in to a crockpot- don’t forget your liner! And cook on high at least 2.5 hours. After that, turn to warm or serve! We like to top ours with tortilla chips as well.

Crockpot soups are my absolute favorite because they are the absolute easiest!
