RIP to the days of good lighting for One Pot Meal photos lol. When it is pitch black out by 5:30 there is no way I am getting dinner finished while there is any trace of sunlight coming through my window, so for the next four months I will be trying my best with artificial light!
Today’s one pot meal is perfect for those cold dark nights because it has all the elements of chicken soup, but in a creamy pasta – yum! Plus it only requires a few ingredients and is done in no time.
One Pot Chicken Noodle Soup Pasta
What you need
1 Pound Chicken Diced
1.5 Cups Water or Chicken Broth
1 Cup Milk
8oz of Frozen Mixed Veggies (Corn, Green Beans, Peas,etc)
1 Box Whole Wheat Rotini
1 Can Cream of Chicken Soup
Onion, Garlic, Black Pepper, Salt
What to do
Cook chicken in a large skillet with onion and garlic. Add your liquid and pasta to the skillet as well along with the veggies. Cook until pasta is tender, stirring frequently. When pasta is about done, add your cream of chicken soup and salt and pepper to taste and stir to combine, you can add a splash of milk if desired. That’s all that’s needed for this super simple meal!
